So you fire up the grill, and a few minutes later, that beautiful cut of Premium Quality Texas Beef has your family “ohing” and “ahing.” But if you feel like there’s still something missing, then it’s time to try these three delicious recipes to make compound butter for steak.
What is Compound Butter
So, what is compound butter? It’s softened butter with different ingredients whipped in to create an incredible topping for your steaks. It’s so easy to make and so good that there’s really no excuse not to try it.
Did I mention that it’s versatile? Do you want something spicy? Add in some roasted jalapenos. Want something fresh? Fold in fresh herbs from your garden. It’s all up to you, so don’t be afraid to get creative! And while the execution is easy, the flavor combinations that you can create are endless.
Honestly, compound butter is one of those things that you should just always have on hand. Try out a few different ideas, then make a big batch of your favorite. Pop it in the freezer, and it’ll last forever.
Our Favorite Compound Butter Recipes
Again, there are a million different flavor combinations of compound butter for steak. These are just a few of our favorites. Try them out, then make adjustments to them. Get the kids involved and let them make up their own unique recipes.
Roasted Garlic Compound Butter
Calling all garlic lovers! This roasted garlic compound butter adds a richness to steaks that is difficult to resist. It’s also fantastic on toasted sourdough bread.
Here’s what you’ll need:
- 2 whole heads of garlic
- 2 tsp olive oil
- 2 sticks of room temperature unsalted butter
- salt to taste
Steps:
- Preheat your oven to 350 F.
- Slice about 1/4 inch off the top of the garlic heads to expose the top of the cloves.
- Place the garlic on a large sheet of aluminum foil and drizzle with olive oil. Then fold the foil over the garlic, wrapping it up.
- Roast for 45 minutes or until the garlic cloves are golden and can be easily removed from the head.
- Squeeze the cloves from their skins and into a bowl and mash with a fork to create a paste.
- Add the butter and combine. Season to taste with salt.
Black Pepper and Bacon Compound Butter
Bacon makes EVERYTHING better! And the hatch chili bacon from HEB makes this compound butter the best. Also, be sure to save some for your morning biscuits.
Here’s what you’ll need:
- 4 slices of thick-cut bacon
- 2 sticks of room temperature unsalted butter
- 1 tbsp cracked black pepper
- 1/2 tbsp of dark brown sugar
Steps:
- Cook bacon until crisp. Reserve 1 tbsp of the fat and cool to room temperature.
- Chop the bacon into small pieces.
- In a medium bowl, combine the saved fat, bacon pieces, and remaining ingredients. Blend well.
Blue Cheese Compound Butter
Steak with blue cheese is a classic. And here on the ranch, this chunky blue cheese compound butter goes on everything but our Frosted Flakes. Honestly, we can’t get enough.
Here’s what you’ll need:
- 2 sticks unsalted butter room temperature
- 1 cup crumbled blue cheese
- 2 tsp. finely sliced fresh chives
- 1 tsp. garlic salt
- 1 tsp. Worcestershire sauce
Steps:
- Combine all the ingredients in a bowl and mix until well blended.
- Left-overs keep in the refrigerator for about 2 weeks.
Some Final Thoughts
- Use unsalted butter as your base. Since many things like cheeses and olives are already salted, you’ll have better control over the saltiness of the finished product.
- If you’re looking to add a fancy touch to your compound butter, you can use a pastry bag and tip to make little butter designs.
- If you’d like to make a large batch of butter for steaks, you can store it in the freezer for quick use. The easiest way to do this is to roll and slice the butter into portions. Just use a sheet of parchment or wax paper, roll the butter into a cylinder, and refrigerate until solid. Then cut into portions and freeze.
